Recipes for Kabuli Chana/Chickpeas

  • How to Use - Soak them in water overnight or for at least 8-12 hours, then rinse them well before cooking. For faster cooking, a pressure cooker can be used, potentially reducing cooking time to 20-25 minutes.

I. Kabuli Chana Chili


  • INGREDIENTS: (Serves - 5)

  • 1 cup Kabuli Chana

  • 4 tablespoon Corn Flour

  • As required oil for deep frying the chana

  • 1 tablespoon Oil

  • 1 tablespoon Chopped Garlic

  • ¼ cup Chopped Onions

  • 2 tablespoon Chopped Scallions

  • 2 tablespoon Chopped Yellow pepper

  • 2 tablespoon Chopped Red pepper

  • 1 teaspoon Salt

  • 1 tablespoon Soy sauce

  • 1 tablespoon Vinegar

  • 1 teaspoon Sugar

  • 2 tablespoon Red chilli sauce

  • 2 teaspoon Corn flour

  • ¼ cup Water

  • 2 tablespoon Ketchup

  • 1 teaspoon White Pepper Powder

  • 2 tablespoon Chopped Scallions

  • 1 teaspoon White Sesame Seeds for garnish




  • INSTRUCTIONS:

    • Wash and soak 1 cup of kabuli chana overnight. Boil adding a teaspoon of salt until soft and set ready.

    • Take the boiled & drained chana in a bowl. Sprinkle 2 tbsp corn flour.

    • Toss the chana so that the corn flour coats well.

    • Add remaining two tablespoons corn flour.

    • Toss again to ensure equal coating. This helps to attain crispy chana once fried.

    • Heat oil in a pan for frying. Add the corn flour coated chana to the hot oil.

    • Fry the chana on high heat without stirring.

    • Once fried until crisp, remove them to a paper towel lined plate.

    • To a sauce pan add 2 tbsp of oil and heat on medium.

    • Once oil is hot add a tbsp of chopped garlic and saute until aromatic.

    • Later add ¼ cup of chopped onions and 2 tbsp of scallions (only the white part) and saute for a minute.

    • Next stir in 2 tbsp of each, chopped yellow and red peppers.

    • Stir and simmer for a minute until they soften a bit.

    • Now add a tsp of salt or to taste.

    • Followed by 1 tbsp soy sauce,1 tbsp vinegar, and 1 tsp sugar.

    • Next stir in 2 tbsp of red chilli sauce.

    • Stir well and simmer for a minute.

    • Prepare a slurry of 2 tsp corn flour and ¼ cup water. Add it to the pan. Stir well to combine.

    • Now squeeze in couple of tbsp of ketchup and sprinkle a tsp of powdered white pepper.

    • Mix well and cook until slightly thick.

    • Add the fried crispy kabuli chana.

    • Mix well to combine the fried chana with the prepared chilli.

    • Once its combined, simmer it for a minute and sprinkle some chopped scallions. Turn off the heat.
